Stephane Delourme, originally from Brittany, France—a region steeped in Celtic history—began his career working in 2 Michelin-starred Sully D’Auteuil in Paris. He spent 25 years working with Rick Stein, firstly as Head Chef of the famous seafood restaurant in Padstow, and later as Group Chef of the Rick Stein Group. Known for his passion for seafood and for crafting dishes that honour the ingredients and cultures he encounters, Stephane’s culinary philosophy is one of creativity, discovery, and connection.
